Abstract

The food and dairy industries are particularly focused on customer demand and product quality, and they 
strive to attain targeted productivity. These food and dairy industries received a lot of technological help as a 
result of growing technological advancements. The use of E-nose and E-tongue among the various 
developments made it possible to manage the manufacturing without any form of diversion. Product 
perfection, consistent flavor, and scent are crucial in the food industry since they dictate the marketing plan. 
The electronic nose (E-nose) is a non-destructive intelligent electronic sensing device that detects, 
distinguishes, and categorizes odor samples by imitating the human olfactory system. An electronic tool called 
E-nose and E-tongue is used as a quick screening method to provide information about the product quality, 
which is difficult to accomplish using manual methods because they take a lot of time. This essay explains the 
E-nose and E-tongue principles and their uses in the food and dairy industries.
